BANOFFEE TART

Easy Banoffee Tart

This quick and easy British classic is a sure fire summertime barbecue favorite!

Equipment

  • Equipment:
  • a processor for quick mixing, or
  • a rolling pin and a plastic bag to smash crackers in and mix butter, etc.
  • a pie plate or tart tin or possibly a casserole dish
  • a spatula for spreading, preferably offset

Ingredients
  

Crust:

  • 12 graham crackers
  • 1 stick of butter melted
  • 3 Tbl Sugar granulated
  • 1 tsp Salt Kosher
  • 1 tsp Cardamom

"Toffee" Filling (Dulce de Leche):

  • 1 can 14oz Sweetened Condensed Milk

the Toppings:

  • 2 bananas sliced
  • 1 thing of Cool Whip
  • Chocolate Shavings

Instructions
 

  • Boil the can of Sweetened Condensed Milk. The actual can, while it's still unopened. Take the label off, and completely submerge it in boiling water for 2 to 2.5 hours and let it cool before you open it.
  • Combine graham crackers, salt, sugar, and cardamom in a processor and run it until it's just crumbs.
  • Drizzle the butter into the crumbs and pulse until it's evenly mixed and a pinch of it holds together. Taste it and adjust seasoning.
  • Baking the crust is totally optional (350f, 180c for 15 minutes). It may change the flavor and texture a bit, but I liked it the way it was, so why bother? If you cook it, let it cool. If you don't, chill it for for about 15 minutes so the butter can firm up again.
  • Carefully spread the Dulce de Leche over the crust, top with sliced bananas, whip, and chocolate shavings done!

Notes

Apart from the Dulce de Leche, (which you can do way ahead of time and just keep it in the pantry indefinitely) this whole thing comes together in just a few minutes!
This was my actual first time trying a banoffee tart, I'd heard about it many times on British Bake Off. I was genuinely mad that I hadn't had this before. Literally called my mother like, "Where was this one all my life?". She also tried it and was equally enraged.
