Curry Pickles

The idea came to me after being hit on the head with a coconut.

Equipment

  • a 32oz jar

Ingredients
  

Brine:

  • 1 cup water
  • 1 cup vinegar
  • 20 g salt
  • 10 g sugar

To the reused pickle jar, add:

  • 4 to 5 Boston Cucumbers
  • 1 Garlic Clove sliced
  • ¼ Yellow Onion sliced
  • 1 Ginger grated
  • 5 Chili de Arbol
  • 3 Bay leaves
  • 2 Cloves
  • ½ Lime
  • 1 Tbsp Curry Powder

Instructions
 

  • Simmer water, vinegar, salt and sugar to dissolve. Let cool a bit.
  • Add all the ingredients to the jar, close the lid, and place it in the fridge for 3 days.

Notes

The bay leaves and Cloves are to add tannins (like in red wine) and should help keep the pickles crispy!
