Barbara's Rhubarb Barbecue Sauce
Ketchup-free Barbecue sauce recipe for all uses!
Equipment
- medium sized pot, pan, or cast iron skillet
- small blender, or stick blender
Ingredients
Ingredients:
- ½ red onion rough chop
- 3 Cloves garlic rough chop
- 1 tbsp veg oil
- 1 tbsp butter
- 1 pinch of salt
- 14 oz can tomatoes fire roasted works well
- 2 cups Rhubarb rinsed to thaw briefly
- ¼ cup brown sugar light or dark
- ¼ cup maple syrup
- 2 tbsp cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp Smoked Paprika
- 1 tsp Dry mustard powder
- 1 tsp Allspice
- 1 tsp black pepper
- ½ tsp cayenne
Instructions
- Sweat the onions and garlic in the butter and oil.
- Add the tomatoes and rhubarb, sugar, vinegar, maple syrup, and Dijon mustard. Give it a good stir.
- Add the dry spices, stir to combine, and let it simmer for a few minutes to reduce a bit, and let all the spices get to know each other.
- Let it cool a few minutes before transferring to a blender to puree. It's now ready to use as a marinade or baste for whatever is going on the grill!
