Black Pepper Sandwich Bread

Squishy white bread with a little kick! The kids won't notice, but it makes an awesome BLT.

Ingredients
  

  • 400 g flour
  • 15 g sugar
  • 250 ml warm milk
  • 7 g instant yeast
  • 3 T warm water
  • 8 g salt
  • 5 g black pepper
  • 3 T butter

Instructions
 

  • Bloom your yeast in a bit of warm water.
  • Mix all ingredients on low, saving the butter for last when the rest of it is half together looking shaggy.
  • 1 T butter at a time until it disappears.
  • Mix until stretchy and smooth.
  • Proof! First proof was a bit over an hour, but im in south texas and its hot and humid. Looking for about double the size it started.
  • Shape. Try not to deflate when shaping.
  • Second proof was a bit less than an hour. In a loaf pan, when it's risen to a half inch from the top (along the sides, should be nearer to the lid in the center) it's ready to bake.
  • Oven to 400 for 35 minutes with the lid, then 10 to 15 without.
  • Or, 45 minutes with no lid the whole time for "loaf" shape.
