Curry Pickles
The idea came to me after being hit on the head with a coconut.

Equipment
- a 32oz jar
Ingredients
Brine:
- 1 cup water
- 1 cup vinegar
- 20 g salt
- 10 g sugar
To the reused pickle jar, add:
- 4 to 5 Boston Cucumbers
- 1 Garlic Clove sliced
- ¼ Yellow Onion sliced
- 1 Ginger grated
- 5 Chili de Arbol
- 3 Bay leaves
- 2 Cloves
- ½ Lime
- 1 Tbsp Curry Powder
Instructions
- Simmer water, vinegar, salt and sugar to dissolve. Let cool a bit.
- Add all the ingredients to the jar, close the lid, and place it in the fridge for 3 days.
Notes
The bay leaves and Cloves are to add tannins (like in red wine) and should help keep the pickles crispy!
