Everything Bagel Pickles
This recipe is still a bit experimental. I mean, it will definitely make pickles, but will they taste like "everything"? Departing from my personally preferred method, this one uses no vinegar or sugar, keeping it very old world traditional, at least in the method.
First, I put my (4) cucumbers in the jar (32oz) and filled it with water to determine how much brine I would need, then I did some math.
Equipment
- jar (32oz)
Ingredients
For 2 Cups Brine:
- 2 cups Water
- 20 g Good Salt 4 tsp
Then, into a jar:
- 4 Boston Cucumbers about 1 lb
- 1 Shallot sliced
- 2 Garlic Cloves smashed
- 4-5 sprigs of Dill washed
- 1 Tbsp 5g Everything Bagel Seasoning
- 2 cups Salty Brine from above
Instructions
- Simmer the water and salt together, just until it dissolves. Or, if your salt isn't course like mine was, you may be able to just stir it with a whisk, or shake it until it dissolves.
- Let it cool off until just warm to the touch.
- Put all the veggies and seasonings into the jar, pour the lukewarm brine over the top.
- Close the lid, and into the fridge for 7 days.
Notes
My wife absolutely loved them this way, but I found them to be a bit lacking in acid and sweetness as compared to what I'm used to. Sequel coming soon.
