Pickled Green Beans
for about a pound (450g) of Veggies in a 32oz jar:

- 32 oz pickle jar with a lid, reused
- a small pot or sauté pan
- a whisk or a spoon
Ingredients
- 1 lb fresh Green Beans cleaned and trimmed
- 1 handful "Fancy" Carrots washed
- 1 ea Shallot bulb small
- 5 ea sprigs fresh oregano
- 1 clove Garlic chopped
- 1 tsp 5g Black Pepper
- 1 tsp 5g Red Pepper Flakes
- 1 tsp 5g Cumin Seed
- 1 tsp 5g Corriander Seed
- 1 cup 225ml White Vinegar
- 1 cup 225ml Water
- 1 tbsp Granulated Sugar 15g
- 1 tbsp Light Brown Sugar 15g
- 1 tbsp Kosher Salt 15g
Instructions
- Put all the veggies, herbs, and spices into a jar.
- Simmer together the water, sugars, and salt until dissolved (Brine!). Let cool a bit.
- Pour vinegar into jar with veggies, pour in brine, close the lid and give it a shake.
- Fridge for 3 days.

I'm sure these are great on a salad or something, but I can't stop eating them straight from the jar. Please send help.
